Whole milk powder (WMP) is produced by removing the water from whole milk, giving a dry powder that retains the milk fat along with the protein, lactose and minerals. It is the full-fat counterpart to skimmed milk powder.
Manufacturers choose WMP when the finished product needs the contribution of milk fat as well as dairy solids — for the richness, flavour carriage and mouthfeel that fat provides — but they need it in a dry, storable, transportable form rather than as a chilled liquid.
